Grapes: 50% Chardonnay, 50% Pinot Nero.
Every year, thanks to its special microclimate, Castello Bonomi is one of the first estates in Italy to begin harvesting. The grapes are rigorously handpicked and collected in small wood boxes to preserve their integrity. This Millesimato 2007 has been harvested in the second half of August, with a careful selection of the grapes. From the grapes we extract only the best must by soft pressure. The vinification is made with the help of cold techniques. We use every precaution to obtain a nocompromises quality. The Pinot Noir ferments in steel tanks. The Chardonnay ferments in oak barrels for 8 months. Once complete, they are carefully blended together for the second fermentation according to the Classical Method (similar to champenoise) to become sparkling.
