Grapes Chardonnay 80%, Pinot Nero 20% Vinification The grapes are pressed gently to extract only the best must and are separately processed by cold maceration in order to preserve the aromas of the grapes. The elegance of the wine is enhanced by the fermentation at 14°C. The first fermentation takes place in steel tanks and wood barrels. After that, the wine refines about 8 months in steel tanks under controlled temperature. Finally the blend is carefully prepared through wines refined in steel and in barrique (about 10%) to obtain a Franciacorta that is fully representative of the terroir. Refinement in the bottle Gran Cuvèe refines minimum 36 months in bottle before the dégorgement. Then it rests further 8-months in the bottle before it is released into the market.
Colour: straw yellow with a fine, long-lasting perlage.
Taste: fresh, soft, with an aftertaste that reminds the bouquet notes.
Bouquet: pleasant, fresh and elegant, with distinctive notes of dry pastry, toasted nuts and tropical fruits.
Gastronomic matches Great as aperitif and to accompany a whole meal. Excellent with fish dishes, shellfish, white meat. A little suggestion: try it with octopus or shrimps salads.
